Butternut squash and Black Bean Tacos

Ingredients

2 tablespoons vegetable oil
1 onion chopped
1 medium butter not squash peeled and cut into 1/2 inch pieces about 5 cups
1 can black beans rinsed and drained
1 package taco seasoning
1 cup water
2 tablespoons fresh cilantro
Taco shells

Directions

He oil over medium heat and cook onions for four minutes. Add squash and cook five minutes, stirring occasionally or until squash is slightly tender. Add beans, taco seasoning and water and cook 10 minutes. Stirring occasionally or until squash is tender. Stir in cilantro and serve in taco shells with your favorite taco toppings. For extra flavor, stir 1 to 2 tablespoons lime juice into squash mixture before serving.
