Flour Tortillas

Note, whenever I make recipes with flour I always try to do it by weight. I can then get much more consistent results.

Ingredients

360 grams all purpose flour (3 cups)
1 tsp salt
1 tsp baking powder
1/3 cup vegetable oil
1 cup warm water

Directions

Combine dry ingredients. Add wet and mix in a stand mixer until it forms a smooth dough. This is a pretty wet dough so it still stick to the sides. This can take 1-2 minutes.

Place dough on a well floured counter and knead a few times so that it comes together. Again it will be a very soft and wet dough. You don't have to knead a lot, just till it comes together.

Divide the dough into 16 equal portions or less if you want bigger tortillas. Let them rest for 15 minutes covered then roll them out until you get a desired thickness.

Using a skillet or cast iron pan if you have one on high heat place a tortilla and cook for about 60 seconds before flipping. Then cook an additional 20 to 30 seconds. Adjust temperature if its cooks too quickly or not fast enough.
