Pear sauce

Ingredients

5 pounds pears – peeled, cored and sliced into large chunks
1 cup sugar
3 tablespoons lemon juice
1 tablespoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
pinch of cloves
1/4 cup water

Directions

Instructions for pressure cooker or instant pot: Add pears, sugar, lemon juice, cinnamon, nutmeg, ginger, cloves and water to the instant pot or pressure cooker. Cook on high pressure for 30 minutes. Do a quick release, we want the steam to come out and not settle back into the pot. Open lid when safe and bring mixture to a boil, reduce to a low rolling boil and simmer for 20 minutes. With an immersion blender, blend the mixture until smooth. Simmer the sauce for another 10 minutes or until the butter is thick and when pushed with a spoon the mixture keeps the ripple from the spoon without filling back in. Allow to cool and store in a jar in the refrigerator or water bath can this in glass jars for 10 minutes.

Instructions for crockpot or slow cooker: Add pears, sugar, lemon juice, cinnamon, nutmeg, ginger, cloves and water to crockpot. Cook on high for 4 hours. Remove the lid and continue cooking for another 3 hours. Blend with an immersion blender and cook for another hour on high or until the mixture is thick and a ripple made with a spoon will stay and not fill back in immediately. Allow to cool and store in a jar in the refrigerator or water bath can this in glass jars for 10 minutes.
