Ingredients
1 cup Orzo Pasta
2 Cup fresh spinach
3 cloves garlic, minced
1 Cup Heavy Cream
1/2 cup chicken broth
1/4 cup Lemon juice
1/2 tsp red pepper flakes
1/2 cup Grated Parmesan cheese
1 Tbs Olive Oil
Frozen meatballs
Directions
1- Heat oil in a large skillet over medium heat. Add the meatballs to heat through for a few minutes. Until golden brown and fully cooked. Remove and set aside.
2- sauté the garlic and orzo: in the same skillet add 1 Tbs of olive oil and sauté the garlic for 1 minute. Stir in the orzo and toast for 1-2 minutes.
3- Pour in chicken broth and lemon juice, stirring to deglaze the pan. Add the heavy cream, red pepper flakes, and spinach. Simmer for 5 minutes until the orzo is tender
4- stir in the Parmesan cheese and return the meatballs to the skillet. Let them warm through for 2-3 minutes.
