Real Mashed Potatoes

Super awesome and easy real mashed potatoes.

Ingredients

8 Medium russet potatoes
1/2 stick butter
1/2 cup half and half
3 cans chicken broth
Salt to taste

Directions

Wash, peel and chop up your potatoes into small cubes. I use an old fashioned apple peeler, slicer and corer to do this and it works great.

Place the potatoes into a large pot that has the chicken stock boiling. The chicken stock should come to the top of the potatoes so that all are in the broth. Boil for about 10 to 15 minutes. They are done when you can easily pierce the potatoes with a fork.

Remove from heat, strain the broth, keeping some in a cup incase you need to add it later. Mix in butter until melted and then add half and half. You can use a potato masher or a blender to mix it up to a creamy consistency. Add salt to taste.

Note: You can use water instead of broth but be very careful not to over cook. When you do it will have a watery taste. If you over cook with the chicken stock, it just ads more flavor... but you still don't want to cook it so much that it doesn't stay together.
